Processing Update: June 2024

Hooray, with an audible sigh of relief! We picked up our most recent beef from Smith Valley Meats. And we are very happy with their work. After the disappointing processing of the last few years, we are thrilled to have our expectations exceeded. No extra trimming is necessary to go from freezer to grill. The Ground Beef is packaged in one pound, easy to stack, packages.

They have produced the best beef sausage we have had yet. Both the mix and linking is consistent. Links fit comfortably on a standard bun. Our freezers are now fully stocked with Bratwurst, Kielbasa, Hot Italian, Mild Italian, and Dinner Dogs.

You might ask, “What’s a Dinner Dog”? Dinner Dogs are an old school style of Hot Dogs.  We’ve thrown some on the grill for a trial run and loved them, several times. They have the same pork casing as the Bratwurst and Kielbasa, but a milder flavor with hints of nutmeg and coriander. They can be ordered here, or stop by the farm.

Also, Smith Valley Meats says they will separate Quarters for us. We are delighted to once again offer Quarter Shares. You can order a Quarter Share here. And because they are USDA inspected we are able to ship beef again. Look for Beef Boxes in the near future.

Matter of fact, we are so pleased with their work that we edited our Order Forms to closely coincide with theirs. The new forms are uploaded and ready. The biggest change is that our beef is now dry aged for a minimum of 21 days.
